All Docker images (34 third-party + 5 custom) now mirrored to gitea.bnkops.com/admin. New installations pull everything from a single registry.

Changes
- All third-party images mirrored to Gitea registry
- docker-compose.prod.yml references mirrored images
- mirror-images.sh rewritten with complete image mapping (34 images)
